Banana Nut Granola

Ingredients:

  • 3 c. Quick cooking oats
  • 1/4 c. Flax meal
  • 1/3 c. chopped almonds
  • 1/3 c. shredded unsweetened coconut
  • 1/3. dried cranberries
  • 1/2 of a ripe banana, mashed
  • 2 tbsp maple syrup
  • 1/4 c. water
  • 1 tbsp canola oil
  • vanilla extract

Preheat the oven to 300 F. In a bowl combine oats, flax meal and almonds. In a small sauce pan, combine the mashed banana, water, maple syrup, oil and vanilla on medium heat until it comes to a boil. Pour banana mixture into oat mixture, stir to combine and spread in an even layer onto a baking pan. Bake for 45 minutes to and hour, stirring every 15 minutes. Be careful, it will burn if you neglect it. When granola is crisp and golden, pull it out of the oven, toss in the coconut and dried cranberries.
