The next best thing

Since I’m vegan right now for the Vegan for a Week Challenge, my raw-oatmeal/ yogurt messes are off the table for now. This morning/ last night I made the next best thing.

Overnight Oats


Last Night:

  • 1/3 c. rolled oats
  • 1 tsp flax meal
  • 1/3 c. soymilk
  • 1/4 c. water
  • vanilla, salt

*soak soak soak*

This Morning:

  • 1/2 banana
  • dried cranberries
  • walnuts
  • brown sugar
  • Pumpkin Flax Granola
  • Peanut Butter (Freshly opened jar, what dreams are made of)
