Nothing like a chilly walk home to make you crave a big bowl of warm things.
Cheesy Vegan Quinoa with Roasted Veggies and Lentils
- 2/3 c. cooked quinoa
- 1/2 c. chopped broccoli
- 5 asparagus spears, chopped
- 1/2 tomato, seeded and sliced
- 1 c. chopped butternut squash
- 1/2 c. cooked green lentils
- 1 tsp olive oil
- salt and pepper
- Vegan Cheese sauce (recipe below)
Toss vegetables in olive oil, salt and pepper and roast at 375 degreed for 45 minutes. In a sauce pan combine vegetables, lentils and cheese sauce and stir together gently. Serve over quinoa and garnish with walnuts.
Vegan Cheese Sauce
- 2 tbsp hummus
- 1.5 tbsp nutritional yeast
- 1 clove of garlic, grated
- 1/4 c. vegetable broth
I’ve been playing a fun game all week. It’s called torment mom by constantly discussing how you’re going to make this ‘vegan for a week’ thing a ‘vegan for life’ thing.
Let me tell you, she’s terrified at how much I’m loving this.
