Bitter Sweet

I love Valentines Day.

I don’t believe that it’s just another coorprate holiday for big companies to make money off of other people’s puppy love. Selling stuffed animals produced by cheap labour and cheesy cards that profess love to another person who will only end up tearing your heart out and serving it with a side of mashed potatoes.

I believe that Valentine’s day is an opportunity for me to watch Be My Valentine, Charlie Brown, wear a lot of pink even though it looks weird on my skin and enjoy lots and lots of chocolate.

Granola for (Chocolate) Lovers

Yields 3 c. of granola

  • 2 c. rolled oats
  • 2 tbsp chia seeds
  • 2 tbsp cocoa powder
  • 2 tbsp agave nectar
  • 2 tbsp oil
  • 1 tsp vanilla extract
  • pinch of salt
  • 1 tbsp jam or preserves (I used Crofters-Europe)
  • 1/2 c. shredded, unsweetened coconut
  • 1/3 c. dried cranberries

Preheat the oven to 250 F. In a small sauce pan heat the agave, oil, jam, vanilla and salt on low until combined. In a medium sized bowl, combine the oats, chia seeds, and cocoa powder. Stir agave mixture into oats and mix well. Spread the granola onto a large baking sheet and bake for 40 minutes, stirring and rotating the pan every 10 minutes. Let the granola cool completely (it will harden as it cools) and stir in the coconut and cranberries.

Quality Control:

This tasted like a grown up version of cocoa puffs, it even made my soy milk brown and chocolatey. The flavour is equally sweet and bitter. This is love.
