Another freezing day in Calgary.

Soup makin’ weather


Kale and white bean soup

Serves 3

  • 1/2 medium onion, sliced
  • 1 small tomato, sliced
  • 3 c. kale, chopped
  • 1 can white kidney beans, drained and rinsed
  • 1 clove garlic, chopped
  • 4 c. vegetable broth
  • 1 tbsp basil pesto
  • 1/2 tbsp olive oil
  • 1 tbsp nutritional yeast
  • salt and pepper

Directions:

Heat the olive oil in a small sauce pan on medium heat and sauté onions until translucent. Add garlic, kale and tomato, continue to cook until kale wilts slightly. Add broth, beans and nutritional yeast. simmer for 10 minutes, season to taste and serve. Garnish each bowl with one teaspoon of basil pesto.

It seems like just yesterday that it was warm enough to justify a Spoon Me run…

Oh, wait. I totally went on a Spoon Me run yesterday. -3°C is warm enough.
