One more week until Christmas, I’m in heaven.
There’s chocolate and sparkles every where, holiday specials are taking over television, and I think the best part of my day is walking by Holt Renfrew (it’s on my way to The Yoga Passage) because they play THE BEST Christmas music. I often get asked WHY I am so obsessed with Christmas, and I really have no good reason other than it is just… the most wonderful time of the year!?!?
This morning I munched on scrambled eggs and toast while figuring out a game plan for Christmas gifts.
Later, my mom and I went to the Karma class at The Yoga Passage (day 18 of December yoga challenge: done). We used to do this every Sunday and get coffee after, but have fallen out of the habit so it was nice to hang!
All afternoon I was cooped up in my kitchen, making cupcakes for my dad’s office as well as a couple of top-secret holiday gifts(!!!)
A full afternoon of beating and icing and sprinkling and melting and stirring and cleaning and cooking and… prancing around the kitchen belting out Christmas songs can really work up and appetite.
In order to fully enjoy the holiday season without going to bed each night in a sugar coma, my plan is to enjoy ONE festive delight a day. Coffee with a splash of eggnog, Ferrero Rocher, LINDOR TRUFFLES, and let’s not forget the abundance of Christmas cookies around every corner. Today it was a coconut topped mini cupcake. Savoured! Not before a for-real meal though.

I. am. WIPED. have a sparkly week!
Oh man, Chemistry is kicking my butt! I’m sure I’d be better at it if the last time I looked at something chemistry related wasn’t FOUR years ago! Where has the time gone? What the heck is a mole? Condensed classes are never a good idea if you expect to fully grasp the concept, we learn over one weeks worth of material in a DAY!
Pre-brain fry breakfast
Berries, Greek Yogurt, granola, puffed brown rice. I added a scoop of peanut butter post picture, but you should know that by now.
I got through another lightning fast Chem class, notes, practise and a lab crammed into four hours weeeeeeeeee
Came home, ate lunch and then felt like baking…

I sat down to focus on the stuff (absolutely everything) that I’m having trouble fully grasping and eventually broke for dinner

I’ve spent enough time hunched over a text book, time for a study break on my BIKE.
Let me tell you, today has been a rough one.
I slept in until 8:00
I ate my breakfast in silence while catching up with blogs- in my pajamas
I had a short and sweaty and glorious work out (in my pajamas), WARNING: Turbofire may become an extreme obsession
I made four meal plans for people trying to gain weight — so much more fun than weight-loss meal plans
and then this happened (in my pajamas)…
Vegan Coconut-Cranberry Scones
Inspiration: Foodie Road Show
- 2 c. whole-wheat pastry flour
- 1/2 c. coconut oil
- 1/3 c. brown sugar
- 2 tsp baking soda
- 1/2 c. dried cranberries
- 2/3 c. non-dairy milk (almond, soy, coconut)
- 1 tsp vanilla extract
- 2 tbsp shredded unsweetened coconut
Preheat the oven to 400.
In a bowl, combine flour, baking soda, sugar, and salt. Mix solid coconut oil into the flour using your finger tips until the mixture resembles sand. Stir in cranberries, vanilla and milk until just combined and form into a round onto a greased baking dish. Brush with milk, sprinkle with shredded coconut and score into eight pieces. Bake for 30 minutes until the exterior is browned
I slathered mine with coconut butter and jam with a cuppa black gold
and now I’m going to watch Disney’s Hercules. It’s 3:30 p.m. and I’m still in my pajamas.
