Veggie Potluck

One of my goals for this year at university was to get involved in at least one group/ society/ committee.

One that caught my eye was the Vegetarian and Vegan club. Though I am neither, I was excited to find a group of people who gather to talk about good food, ethical practises and everything in between. Last night was the welcome potluck/ meet and greet and there was a great spread of food and wonderful conversation. I also met a fellow blogger Mallory. She’s had culinary training and is a runner extraordinaire.

I brought pumpkin cookies using this recipe (used spelt flour and a flax egg) and veggie juice to the potluck. There was a good assortment of grainy and vegetable salads and home made pretzel buns. YUM

This morning I took an RPM class and came home to enjoy a lazy breakfast while catching up with Glee

I’m starting to notice a pattern here

Another weekend bites the dust.

On Friday I went to a orthodontist appointment to pick up my stylin’ new retainer. Fact: I wore braces for seven years, plus two years of special retainers and head gears. Every time someone tells me I have a nice smile I reply with a snarky “I had better have a nice smile after all the years of torture I went through” It’s very unbecoming of me but I can’t help myself.

I went to work at Yoga Passage for the afternoon. It was my first solo shift and just when I started to get a little bit anxious, I heard an OM from the studio behind me and a sweet yogi gave me a Vegan, Gluten-Free cookie and tea. I could get used to this.

Typical Friday night.

On Saturday I was up early, double fisted a smoothie and tea and went to the Ashtanga 2 class before working.

I had a birthday to go to later that night so I did my hair, put on a uncomfertable outfit and even worse shoes and then proceeded to fall asleep (fully dressed) on top of a pile of laundry. This morning I had breakfast with my friend Natradee, we enjoyed a spread of yogurt with fruit and granola, peanut butter on toast and a boiled egg. It felt like a hotel breakfast.

Afterwards we went to Body Combat, where the instructor cruelly added plyometric lunges and donkey kicks to the mix. Grunting. Lots of grunting.

As much as I wanted to stay at home for the rest of the day and watch more Mad Men, I knew today was really my only chance to make a significant dent in my research paper that is due on Thursday -silent sobs- so I packed my bags and set up camp at Higher Ground Cafe for some work time.

On Friday

I had plans to go to 6 a.m. spin

It didn’t happen. My alarm woke me up at 5:15, I blinked and it was 7:45. Fail.

I got an ab workout at least from laughing so hard at work. I love my coworkers.

I managed to eat a green vegetable for the first time in a few days

In the form of kale chips. Working on it

I had my first coffee since the cleanse. Small medium roast brew white with soy milk and one pump of gingerbread please and thanks.

The people at the coffee shop missed me so much.

I made myself a nice little dinner of butternut squash – barley risotto with goats cheese

I really just wanted cookies.

Browned butter chocolate chip cookies. Which we’ll talk more about tomorrow. If they last that long.

Girl meets Grill

So, what I don’t get is how people can be so incredibly passionate about barbecue

Last night, I was thrown into manning the grill head first. On the menu was grilled chicken and zucchini with roasted potatoes

I was flustered, hungry and am now sporting third degree burns all over my hands.

I swore out loud several times. My voice even echoed once.

At least the food was delicious, I took bites between silent sobs while icing my hands.

Meat is back in my life, I have a post about that in the works

and I did a little baking, using this recipe, I made chocolate peanut butter cookies. We were out of chocolate chips but had some Reeses cups lying around so I chopped those up and sprinkled them on top before baking. YUM

I just got back from an early morning run and now I’m going shopping with my parents. This never happens, hopefully they’ll buy me things!

Remember that time I said that cookies should never be healthy? I was wrong.

These are good and good for you!

I used Tina’s Oatmeal Banana Chocolate Chip Cookie recipe to work from but made several modifications. I also halved the recipe and ended up with 10 pretty big cookies. As you can see from the picture above, they do expand as they bake, give them room to grow.


  • 1/4 c. whole-wheat pastry flour
  • 1/2 c. rolled oats
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tbsp chia seeds
  • 2 tbsp. maply syrup
  • 2 tbsp. almond milk
  • splash of  vanilla extract
  • 1/2 tbsp. coconut oil, melted
  • 1/2 ripe banana
  • 2 squares of dark chocolate, chopped (or 2 tbsp. dark chocolate chips)
  • 2 tbsp. shredded, unsweetened coconut
  • Pinch of cinnamon
  • Pinch of salt
Directions: In a bowl, combine flour, oats, baking powder, baking soda, chia seeds, coconut, chocolate, salt and cinnamon. In a seperate bowl, mash the banana half, stir in the almond milk, melted coconut oil, and maple syrup. Combine wet ingredients with dry, and scoop batter by the tablespoon onto a greased cookie sheet. Bake for 12 minutes and allow to cool.

They were more cakey than cookie but still tasty and chewy and ADDICTIVE. They’re gone now, they lasted all of three days.

I didn’t stop in to gush about my mom yesterday because we were to busy hanging out all day! We ran errands, went to yoga and went out for a late dinner with my dad and brother. My mom is awesome. She’s hilarious, generous, and a total babe. Love you, little thing!

Perfect Day for a Picnic

I tossed and turned all night long and woke up completely refreshed and feeling 96% healthy! Strange how that worked out.

Today I got to speak at an assembly at my old high school about health and nutrition. I talked about how I wasn’t very healthy in high school (even when I thought I was) and what a great feeling it is to be truly healthy.

I was a little nervous…

But my friend Preeya offered some words of wisdom: “if you blank, don’t say the eff word


It was so much fun! I love my high school, thanks to the Health and Wellness Club for inviting me!

I’ve mentioned my friend Brittany’s 30 day blog challange before, on the schedule for today was to have a picnic, it was a little cold out so we took the picnic inside

We also made almond butter cookies! Using this recipe, but we replaced the peanut butter with almond butter, and traded the chocolate for cinnamon.

Look at what I found at the bottom of my bag today..

I vaguely remember throwing a hard-boiled egg into my bag earlier this week for a snack, but I completely forgot about it until Preeya and Brittany mentioned some yellow gunk stuck to my water bottle.

Gross. Do pack healthy snacks but don’t forget about them.
