Pumpkins and Pancakes

I am happily settling in to the swing of things. My days are busy but not overwhelming and I’m maintaining a happy balance of work, school and play. Clearly I need to be just the slightest bit more organized, though, so that I can squeeze in a few more blog posts in the week! So much to blog so little time!

I wanted to share a new addition to the breakfast rotation. It’s cooling down in the mornings so I’m not having big green smoothies quite as often – I still do enjoy them, after I’m bundled up in sweats, wool socks, my favourite hoodie and nestled underneath a blanket next to a space heater…

I make pancakes every once in a while using spelt, buckwheat or oat flour. Or if I’m feeling particularly lazy, I simply use Kodiak Mix. All of the outcomes are delicious but pancakes have a funny way of leaving me STUFFED at the scene, then famished an hour later. No bueno.

I’ve heard good things of this recipe for protein pancakes. I never thought I would be one to have protein powder as a dietary staple, but it really does help to power me through busy mornings.

Here’s one variation with bananas (cooked inside) with drippy almond butter and raspberry chia jam

and another with pure pumpkin and dark chocolate mixed into the batter with bananas, almond butter and pure maple syrup.

Besides enjoying these comforting short-stacks for breakfast, I’ve officially crossed over into the dark orange side: PUMPKIN EVERYTHING.

Pumpkin Overnight Oats.

  • 1/3  c. oatmeal
  • 1 tbsp. Sunwarrior protein powder
  • 1 tbsp. chia seeds
  • 1/4 c. pure pumpkin puree
  • 1/2 c. almond milk
  • 1/2 tsp. cinnamon
  • 1/4 tsp. ginger

Leave in the fridge to soak overnight and top with pure maple syrup, chopped pear, almond butter, and trail mix.

Crazy Sexy Adventure Day 11: Kittens, Oatmeal, Veggies, Yoga

My friend Jessie is a new yoga teacher and wanted some head shots but the only time that worked was early in the a.m. For convenience sake, I slept over after yoga last night and we were up bright and early to get some pictures of her pretty face.

I packed a green juice. Nerd.

We took a quick snap, snap, met some nice people with a bag of kittens.

Literally a bag full of kittens. 

Once I arrived home I ate some delicious overnight oats in an almost empty peanut butter jar with tonnes of fruit and a little sprinkle of granola.

 

I had a pretty lazy morning which included laundry and a Girls marathon. I had a late lunch of curried lentil soup and a giant salad. I also had some Mary’s Crackers on the side.

Eventually I peeled myself off of the couch and headed to yoga.

My mom once told me that when living in New York she often enjoyed the Hallmark slice of street car pizza for lunch. One day, her boss came to work with TWO slices for herself. The thought had never occurred to my mom that one could eat TWO slices of pizza. I think of that every time I do a yoga double. 4:10 ishta + 6:10 Hot (half an hour in-between classes). Crazy Sweaty Bliss.

Once I got home I threw together some sautéed veggies, brown rice noodles and a generous serving of spicy almond butter sauce.

In the Fog

Played this song on repeat in my brain all the live long day

Calgary has been swallowed whole by a blanket of fog. I took a walk this morning expecting an axe murderer to emerge from the grey.

Foggy Steamy bowl of oatmeal for fast-breaking

Oats, almond milk, banana, craisins, chia seeds, cinnamon, cottage cheese

+ Peanut butter, pumpkin butter and granola.

Meandered (through the FOG!) to the gym midmorning and came home to Lunch which was an open-faced turkey sandwich – whole grain toast, hummus, artichoke Asiago spread, tomato, spinach, turkey (found a brand with an impressive ingredient list) and a sprinkle of parmesan, vegetable and tomato soup and mango for dessert

I went to karma cleaning later in the afternoon and stuck around for a class. The usual teacher was away and the teacher subbing taught the fist EVER class I took at the Yoga Passage. Happy flashbacks.

Dinner

I made white-bean and kale soup — with chickpeas instead of white beans because that was all I had. I also threw in the rind from a wedge of parmesan cheese like they do on the Food Network #pro.

and brown butter quick bread, I stirred in chunks of sharp cheddar cheese before baking.

Look at that HUNKA CHEESE Now I’m snuggling up with a glass of wine and watching episode after episode of LOST with my girlfriend Torrie

Shades of Grey

Hazy grey day in Calgary today. The perfect day for those who say they love the smell of rain aka. the smell of drowning Earth worms.

I embraced all neutrals today to go with the skies. That reminds me of this incredibly eloquent post speaking to the simple beauty of neutral colors. It may or may not have inspired me to purge my closet of all hilighter toned pieces.

I went to work for a few hours and spent the rest of the afternoon wandering around in the rain, capping the day off with my favorite hot yoga class  ♥

Super Weekend

Happy Sunday! Whether you were watching foot ball, working, relaxing or catching up on stuff from the week, I hope it was a good weekend! Mine was a perfect mix of work and play. Saturday started with one of my old favorite breakfasts:

Plain Greek yogurt, banana, chia seeds, raw oats, strawberries topped with crunchy peanut butter and apricot preserves.

I spent the rest of the day studying at Starbucks and taking my usual double dip into the yoga studio. Ashtanga 2 followed by Restorative. The rest of the day was spent grocery shopping and out to dinner with my friend Shayna.

I started my Sunday kicking and screaming (kickboxing class) came home, showered made lunch inspired by a creation I saw on Jens blog a few days back and made sure to pick up the necessary ingredients when I was at the store yesterday.

Brown rice tortilla (I love the texture) with a scrambled egg, goat brie, apricot preserves and spinach. With carrots, strawberries and persimmon on the side. Good lunch!

After eating, I studied for a few hours, napped, and woke up just as my mom was coming back from yoga. She graciously picked up a coffee for me on her way home.

Am I the only one who needs a snack as soon as she wakes up from a nap?

Being that it was Super Bowl Sunday, dinner was turkey chili with all the fixin’s, salad and blue corn chips

Funnily enough, no one in the house really cares about football, highlights were obviously the Hunger Games movie preview and Madonna’s half time show. For the rest of the game I alternated reading my textbook and watching Toy Story 3.

Oh, Snap

It’s a cold snap.

Temperatures in Cowtown have dropped to below 30 degrees. Eyeball freezing temperature!

Mouth burning oats

I headed to class and then to the University gym. I’ve heard rumors that it is always crowded and unfortunately, the rumors are true. Dang healthy folk! I still managed to get in a good work out, hurts to type (but it was a leg work out…?)

I went to work for the afternoon and made the painfully cold commute home.

My mom has this annoying habit of reading my mind and made cabbage soup for dinner. This aint your Cabbage-soup-diet-cabbage-soup. Super simple and delicious with a side of cheesy toast.

I’m currently listening to the Robinson Crusoe audio book. I just could. not. focus. on that novel! But having someone read it to me works quite nicely. I’m a little annoyed, however, that I dropped $35 on the book itself. Lesson learned!

 

Windy City

My Monday started with an amazing bowl of oatmeal

Rolled oats, almond milk, pumpkin, banana, cinnamon

loaded with toppings: granola sprinkles, pumpkin butter, almond butter and butterscotch chips

I was planning on hanging out for a bit before leaving for work and was scrolling through my twitter feed when I spotted several local tweeters complaining about their brutal commute to work.

Yesterday Calgary was hit with a terrible wind storm, downtown was shut down and city workers had to work through the night in order to make the Monday commute more bearable.

Luckily I got the memo early and left for work right away and made it on time.

After work I hit the mall with my friend Brittany to find her a birthday ensemble. FYI, the best activity for a ‘rest from exercise day’ is window shopping in high heels with a 20 pound bag. I think I need a rest day from my rest day!

I just devoured a bowl of asparagus soup for dinner and am ready. for. bed. NIGHT!

Thursday Un-spun

Thanks to the nice family of overnight oat chefs who live in my fridge, breakfast was waiting to be devoured this morning

With banana, sunflower seed, crofter’s jam and pepitas added this morning.

The thought of going to spin this morning was so off-putting. Insert rest day HERE.

I did, however, take my hairy lump of a dog for a stroll

Dinner was cold pizza and wine. It’s been a day.

Weekend Appreciation

From the summer of 2010 until summer 2011, I  could never really say TGIF because I worked on Saturdays. But now that I’m a Monday to Friday girl, I’ve regained the appreciation for weekends that I haven’t had since highschool! Bring on the sleeping in (until 7 a.m.) and leisurely chores (who am I kidding, I avoid my chores like the plague)

WhatEVER! TGIF. So there.

Breakfast

Oatbran, banana, almond milk, cinnamon, chia seeds, molasses, almond butter

Then there was yoga! A thousand chaturanga repeaters later, I headed to work.

My toes all but froze off on my way home but at least dinner was waiting!

Quinoa, green beans, salmon

Time to become a pathetic blob and sink into my sofa until Sunday night.

Take my Breath Away

Is it even possible to have a bad day when you eat a COOKIE for breakfast?

Rolled oats, mashed banana, almond butter, shredded coconut, cocoa powder

drizzled with coconut butter and a sprinkle of cocoa nibs

I went to spin mid-morning for some murderous hills. Hurt SO good. I was a sweaty, breathless mess by the end of class and hobbled away from my bike a new woman.
