Today I made the executive decision to skip the gym and bake some cookies.
Hello… It’s called avoiding injury and carbo-loading.
Both are crucial before a race.
It was the responsible thing to do.
Flourless Peanut Butter Cookies
inspired by PBF
- 1 c. Peanut Butter (I used Costco natural)
- 3/4 c. brown sugar
- 1 flax egg (1 tbsp + 3 tbsp water)
- dark chocolate (I used 2 squares of Lindt 85%)
- Vanilla extract
- Sea Salt
Directions:
Preheat your oven to 350. Combine all ingredients except for the sea salt, scoop onto a baking sheet by the tablespoon and sprinkle each cookie with a couple of grains of sea salt. Bake for 10 minutes.
A responsible althlete knows to fuel him or herself with quality ingredients. Organic peanut butter, flax seed, dark chocolate?
These cookies are pretty much health food.
It’s also my responsibility to make sure these things are edible enough to share.
